Pumpkin special

A lovely seasonal soup. Add butter or double cream to fortify.

Preparation time:10 minutes


Cooking time:45 minutes

  • Ingredients
    • Approximately 800g of pumpkin flesh
    • 1 carton of orange juice
    • 2 tbsp finely chopped ginger
    • Salt and pepper
  • Method
    1. Skin the pumpkin and chop the flesh into small pieces.
    2. Bring to the boil in a pan with the orange juice and ginger. Simmer for half an hour or until soft.
    3. Allow to cool and blend.
    4. Add salt and pepper to taste and reheat gently.
