Prune purée

Almost any fruit can be blended into a purée – these can also be used as sauces for ice-cream. This is a great way of getting extra fibre and some dried fruits are a source of iron. Keep drinking enough to stay hydrated and prevent constipation.


  • Method
    1. Soak dried prunes in hot tea, a dash of lemon juice and some grated lemon peel.
    2. Leave overnight, then simmer until soft.
    3. Remove any stones and blend. Add a little of the liquid until you get the consistency required.
