Bobotie

This is an easy version of a traditional South African dish, using curried mince beef with a savoury egg custard topping.

  • Ingredients

    For the meat dish

    • 500g of minced beef
    • 1 slice thick white bread
    • Full-fat or semi skimmed milk to soak the bread
    • Butter for frying
    • 1 finely chopped medium onion
    • 2 finely chopped garlic cloves or two tsp garlic paste
    • 4 tsp curry paste or curry powder (use a mild version to avoid too much heat)

    For the topping

    • 2 large eggs at room temperature
    • Double cream
    • Milk, reserved from soaking the bread Nutmeg (a small pinch)
    • Cumin
    • 1 grated Granny Smith apple (squeeze out excess juice in a clean tea towel or soften the apple by stewing if easier to eat)
    • Worcestershire sauce
    • 2 tbsp mango chutney or apricot jam
  • Method
    1. Soak the bread in the milk.
    2. Heat the butter in a frying pan. Fry the onions and garlic on a medium heat for 5 minutes until soft.
    3. Add in the minced beef and cook until it has changed colour.
    4. Mix in the curry paste and simmer for 5 minutes.
    5. Squeeze the milk from the slice of bread and keep to one side. Stir the bread in with the minced beef.
    6. Place the mixture into an oven-proof baking dish and push down firmly with a spoon.
    7. Whisk together the eggs, cream, nutmeg and reserved milk.
    8. Pour the egg mix onto the beef.
    9. Bake in the oven for 30 minutes until the topping is golden.
    10. To serve, sprinkle with a little cumin to taste. Garnish with grated or stewed apple, mango
      chutney and Worcestershire sauce.
